We held a Ribbon Cutting ceremony Saturday, October 4th 2025 for Renewed Perspectives LLC and Look Up Counseling ! It was a beautiful, hot and windy day with lots of supporters!!!

Renewed Perspectives, LLC.

My name is Rachael Finstuen. I am married to Derek Finstuen and we have two children, Avery (7.5) and Colton (5). My interests include baking, reading, painting, and organizing but we are emerging in the phase of life that revolves around kids’ activities, so we spend a lot of our time with gymnastics, youth football, and softball. 

  • Inspiration behind starting business: 

I had always pictured starting a private practice someday, but the opportunity presented itself much sooner than the plan I had in my mind when a colleague invited me to look at an office space that was available. I worked as a director for a local mental health agency and the expectations of the position, struggles with work/life balance, and my need for flexibility and presence in my own family life prompted the decision to start my practice now. My business operates on a foundation of making sure mental health services are accessible to anyone who is seeking them, including reducing financial barriers, meeting people where they are, including being accessible in a rural community, and supporting a community that I was raised in. 

  • What’ll be served/sold: 

I am a Licensed Professional Clinical Counselor in the state of Minnesota. I provide individual, couples, and family therapy to clients aged 6 and up. I am heavily trained in trauma informed care (Eye Movement Desensitization and Reprocessing – EMDR, and Trauma Focused Cognitive Behavioral Therapy – TFCBT) and am drawn to treating clients with PTSD. My scope of practice goes beyond trauma including helping people with mood disorders, anxiety, panic, behavioral disorders, providing neuro-affirming care, adjustment disorders, grief, and interpersonal communication problems. I am a contracted provider with a variety of major insurance networks (United HealthCare, Medica, BCBS, Aetna, Medical Assistance, Medicare, SCHA, and UCare), offer a sliding fee scale for people facing financial barriers, and out of pocket pay for clients who do not have access to or do not wish to use insurance. 

  • Goals for the future: 

I am a Board Certified Licensure Supervisor for clinical trainees (LPC and LPCC) in the state of Minnesota. I would like to expand my practice to supervising emerging clinicians and eventually growing my practice with one or two more licensed professionals. My goals for my current practice are to continue to grow as a positive resource for community members, and to normalize positive help seeking behavior for stigmatized issues.

Look Up Counseling

My name is Ellen Lilla, MSW (Masters in Social Work), LICSW (Licensed Independent Clinical Social Worker). Husband (Richard F Lilla), son (Richard M Lilla) and son (Dean Lilla). I enjoy spending time on the river boating with my family and friends,3 hosting family and friend get togethers whether that is for a football game, birthday party, or just to hang, sand volleyball at the Trailhead, playing sports with my sons and husband, and play the piano.

 

Inspiration behind starting business: I knew in middle school that I wanted to be a therapist in some capacity. I just didn't know how to get there, and what population or area of focus interested me the most. I have worked with children, families, teens, and couples but throughout my career found a passion for perinatal therapy. This passion stems from my own personal struggle and growth as a parent. 

 

Here's my story about how I came up with the name Look Up Counseling (if you want to add this or not- it may be too much)

 

"One sunny day during my postpartum period, I was outside with my kids feeling anxious and down. I remember looking down at the ground while in my head thinking negatively and worrying. I remember telling myself "look up Ellen" and I did. I looked up and saw my kids enjoying the sunny day and the beauty of nature. That was a turning point in my life to continue to look up because there are so many joyful things to appreciate and if I don't look up and be present, I will miss it. It also pushed me to work on my mental health as well as start specializing in perinatal therapy. When you start therapy at Look Up Counseling, you know you are not alone in your struggles and mental health. I have lived it and recovered and so can you.

Fun fact: sunflowers turn towards the sun which is why they are a part of my logo. Continue to look towards the warmth and joy in your life. Be a sunflower."


 

What'll be served/sold: I provide services to clients 12 years and older. Services I provide are: Diagnostic Assessments, Psychotherapy (individual, family and couples), Accelerated Resolution Therapy, and Perinatal Therapy (includes grief and loss, fertility challenges, pregnancy challenges, traumatic birth experiences, post partum mental health, relationship challenges, and adjusting to their new identity as a parent).

Goals for future: I would love to expand and grow by adding other therapists to my practice to serve the community. It would also be great to partner with other mental health agencies in the community to provide consultation and support amongst the field. Finally, I would love to partner and collaborate more with other wellness providers in the community such as (Physical Therapists, OB providers, holistic healing practices, Nutritionists, Schools, community programs, etc) as I believe healing your mental health includes healing the body, mind and soul.

Jo's Coffee Truck

​We held a ribbon cutting ceremony on March 4th, 2025, for Jo’s Coffee Truck! It was chilly and windy, but we appreciate those from the community that were able to attend! We are very excited to Welcome Jo’s coffee Truck to the Pine Island Community!

Meet the Owner:

●       Name, family, interests: My name is Tara Gullickson & I am the proud owner of Jo's Coffee Truck. I live in Mazeppa with my fiancé, Jason Stein & our two boys, Weston Hackman & Triston Stein. We have a dog Hazel (5 yrs) and two kitties, Binx (2 yrs) and Earl (6 mo.). I enjoy nature, gardening, reading, writing, crafting, and camping.    

●       Inspiration behind starting the business: I took some time off to heal after losing my job in healthcare in early 2022 and decided to paint my living room a beautiful hue of purple; it was during that time the idea of a coffee shop came to me. After many sleepless nights and long hours of discussion with my fiancé, we devised a plan and started building out the coffee truck on graph paper. We can't wait to see where this takes us! 

●       What'll be served/sold: I am a specialty coffee shop on wheels, I serve lattes, mochas, matcha, chai, herbal tea blends, smoothies, refreshers, hot cocoa, frozen cocoa, and more! I will also be offering pastries again (coming soon). I am excited to bring back an assortment of scones, Danishes, rolls, and muffins. What makes me different from other coffee shops is I craft my very own coffee syrup & sauces used in each of my delicious drinks using local ingredients when possible!  

●       Goals for the future: My goals for the future would be to expand what I offer in regard to retail items from various local artisans & vendors. My favorite part in all of this has been the inspiring people I meet along the way. The end goal is to open a brick & mortar at some point and offer live music/open mic, art galleries, and other fun events for my community.
